Herbs for the Kitchen: Preserving Summer’s Herbs for Winter Use

Now, while gardens and farms stands are brimming with fresh herbs, is the time to prepare for winter cooking and holiday gift giving. Imagine lining your cupboard shelves with jewel-toned bottles of herb vinegars, golden brown herb mustards and sparkling jars of herbed jellies. Picture containers of herbed butters, bags of rosemary walnuts and jars of herb pestos filling a corner of your freezer. Not enough time? Too much work? Not true!! These delicious enhancements to daily meals are quickly and easily made. Learn how to dry or freeze herbs and how to make mustards, butters, vinegars, jellies, flavored nuts and pestos with fresh herbs. Students will sample each recipe demonstrated and then make an herb vinegar, herb mustard and herb butter to take home. Fee includes the cost of food, supplies and a copy of Betsy’s book “Mrs. Thrift’s Cupboard”, a collection of tried and true herbal recipes for the time-challenged cook.
Thanksgiving Centerpiece

Decorate your Thanksgiving table with the bounty of the season! Make your own beautiful, long-lasting centerpiece of fresh fall flowers, preserved autumn leaves, fruits, vegetables, fragrant herbs and seasonal berries to celebrate our national day of thanks. We will create an arrangement that says abundance! Choose a basket or container from a selection supplied by the instructor. The container, plant materials and all supplies are included in the fee. Please bring an apron and floral scissors.
Moss Topiary Trees for Winter Celebrations

Mossy, stylized topiary trees set in terra cotta pots add a touch of winter forest to December celebrations. Made with soft, green mosses and natural trunks, the 14" trees bring a woodland simplicity to holiday decorating. Students will make a set of three trees in either round or cone shape. The trees can be finished with miniature pine cones and a touch of gold sparkle. All materials provided. Please bring an apron and floral scissors.
Apples, Ivy, Nuts , Berries And Evergreen Centerpiece

Apples, nuts and pine are the essence of New England Christmas. Ivy, box and berries add a touch of Old World winter celebration. Fill a stone or ceramic container with an arrangement of shiny red apples, brown nuts, trailing ivy, fragrant evergreens and berries to create a beautiful centerpiece for your holiday table. Fruit and greens arrangements are fun to make and, kept well watered, will last the holiday season. All supplies, including the container and plant materials, will be provided. Please bring clippers and an apron.
